We were finally able to get some professionals in to finish gutting the house. Here are some pictures from a couple of days ago. They had made considerable progress. Note how wet the floors still are in some of these pictures.

We're just so grateful that this is getting done and we're not doing it. Unfortunately, the gutting has revealed some dry rot from previous flooding (that was not disclosed to us when we bought the house).
